Anabolic Thai Green/Red Curry Recipe

This recipe is packed with protein and healthy vegetables. It's also quick and easy to make, perfect for a busy weeknight!

Ingredients:

  • 8 oz diced chicken breast
  • 150 grams mixed vegetables
  • 1 garlic clove minced
  • 30 grams minced onion
  • 10 grams ginger minced
  • 1/3 cup of coconut milk/can be subbed with lite coconut milk
  • 1 tbsp Green Curry Paste or Red Curry Paste
  • 50 grams Greek Yogurt
  • 100 grams Broccoli Florets
  • Paprika
  • Salt and Pepper
  • Red Chili Flakes

Instructions:

  1. Mix the cubed up chicken with all the dry spices.
  1. Heat the oil in a large pan over medium-high heat.
  1. Add the diced chicken and cook until browned, about 5-7 minutes.
  1. Remove the chicken from the pan
  1. Add the onion, garlic, and ginger and sauté for 2-3 minutes or until the onion is translucent.
  1. Saute the mixed vegetables
  1. Pour in the coconut milk
  1. Mix in the Curry Paste of choice, and bring to a simmer
  1. Turn off the heat and let it rest for 2 minutes
  1. Mix in the Greek Yogurt
  1. Steam the Broccoli and enjoy it on the side
